Kristi's Amazing Deep-Dish Low-Carb Spinach Quiche Pizza/Casserole Recipe

Start by browning a package of Italian sausage
(preferrably msg- & nitrate-free).

I threw in a handful of minced dried onions.
Feel free to use fresh (if you have no children and lots of time on your hands.)

Shred some mozzerella (or your fave) cheese while the meat is cooking. I don't use pre-shredded cheese. Did you know they add potato starch to pre-shredded cheese to keep it from sticking together? BAD!
Not good for low-carbers. Sneaky little buzzards.

I made this in a 9x13 glass dish, so I used 8 eggs.

Throw in about a cup of Parmesan. (Grated from a canister is fine/ feel free to use fresh if you've got it.)

Throw in 1-2 cups of fresh or frozen spinach. You can skip the spinach if spinach grosses you out. But it shouldn't. It's awesome and so good for you and so yummy. Trust me.

Mix.

Pour into a well-greased pan. Isn't it pretty?
I forgot to take a picture when it was done, but it was soo pretty and toasty.

I bake mine under the broiler and just keep an eye on it until it's set.
Time just depends on your oven and how thick your mixture.
Just keep an eye on it. Don't walk away!

You should also have chopped some fresh onions at some point.

And I love black olives, so I add those too. I meant to buy a green pepper,
but my brain doesn't usually work very well at the grocery store.

I buy the whole ones and break them up. Who has time for slicing?

Mushrooms and cheapo pizza sauce. The sauce has a minimal amount of sugar, but we'll pretend it doesn't for now. Feel free to use fresh everything and make your own sauce. (I'm jealous of all your free time now.)

Spread, dump, poor, arrange...whatever...

Yes. Yes, it IS as good as it looks. Hubby even had seconds.

Also makes a great breakfast. YUMMM.

Kristi's Pumpkin Chili Recipe

This makes a lot--great leftovers!

2 lb ground beef

2 medium onions (chopped)

1 tablespoon cumin

1 tablespoon chili powder

1 tablespoon dried garlic (or 1tsp powder or fresh)

1/2 teaspoon fennel (powder, not whole)

salt (to taste--it's really up to how you like it)

black pepper (to-taste, I also use "veggie pepper" from Mama Jean's)

3 cans green beans (drained) you can chop them smaller if you prefer

1 can black beans (drained-- just use your favorite kind. I don't add a lot because they are higher in carbs

1 15-oz can pumpkin (PUMPKIN! Not pumpkin pie filling!!)

1 29-oz can crushed tomatoes

Brown ground beef with onions and spices (or break up and cook in your crockpot on low all day if you have time).

Mix everything together, and add 1-2 cans of water--depends on how thick you like it. Cook in the crockpot on low all day, or simmer on the stove until the flavors are blended.

Yield: A LOT!

Serve with shredded cheese and sour cream.

Here's what's for dinner!

Chicken

First off, throw some chicken in the crock pot overnight. Salt. About a cup or so of water to keep it from going dry in case you're using some sort of horrible chicken that's had the wonderful fat removed. I use thighs and legs with the skin and fat on. Makes wonderful broth to use with another meal.

If you're a crazy busy mom like me, cook it on low overnight (unless you don't remember until midnight, and then cook it on high overnight!). Turn it down on warm before you leave for work in the morning!

When you get home from work, debone the chicken, discard the skin, SAVE the broth. EAT. (You can ruin it with corn-syrup-infested sauces or seasoning blends, but it tastes REAL with just a sprinkle of salt.)

Now for the zucchini.

Get your dad to grow an awesome garden.
Be really nice so your parents will give you lots of free home-grown produce. (It is helpful to also give them a grandchild in return. The amount of produce you receive will increase exponentially.)
Throw 1/4 cup REAL butter in a hot nonstick saucepan.
Peal and chop up said zucchini. (Fancy slices if you want, but big chunks are easier to saute!)
Your butter should be getting a nice brownish color by now. You want this to happen. Believe me.
Toss the zucchini in. Bit of salt. Spoonful of garlic (the wonderful kind that comes in jars all ready to go!).
Sauté for awhile on medium till everything looks nice and brown. Turn the heat down to low and put a lid on and let it cook for awhile. Timing depends on how soft you want your veggies.

Simple Cottage Cheese Salad I thought up

Chop up one small tomato. Sprinkle with salt and let sit a few minutes.
Chop up about 12 green olives. (Or 3 T if you have a jar that's already sliced....cheater.)
Mix tomatoes and olives into about 1 cup of cottage cheese (don't get that nasty low-fat business; get the stuff that actually tastes super yummy).
Stir in about 1/3 cup finely grated cheese (Grate your own cheese! They add potato starch to pre-grated cheese!! Bad, carbs, bad!).

And by the way, I don't believe it when people say their kids won't eat veggies. You've just ruined them with nasty reconstituted msg-laden fast-food and microwave meals. My five year-old devoured her zucchini in five minutes (which makes me sad, cuz I wanted there to be leftovers).

Low Carbin' and Lovin' It!!

Today marks my one-year anniversary on the Atkins diet! And I'm still lovin' it!

A year ago I weighed 258lbs; today I weigh 201lbs! Woohoo!

I still have quite a way to go, but I'm thrilled with my progress and won't be ditching this lifestyle anytime soon!

A year ago I had high blood pressure, migraines 24/7, no energy, and with clinical hypoglycemia, no matter what I ate, I couldn't stay awake. I was becoming very forgetful, and I thought I was losing my mind!

Now I'm doing great, thanks to my awesome doctor at the Headache Care Center who recommended I try Atkins for my headaches, I am now about 98% headache free. When I do get a headache I can usually pinpoint the cause and eliminate it.

And now for the best part--the before and after photos! And hopefully on July 2, 2011 I'll be posting the next set of photos!

This one makes me sad. I was miserable!

It's been a long--but wonderful year!

News from Faith Sisters: My Lifetime Story

As the year is coming to an end we are busy planning for next year. In 2010 we are going back to the basics of leaving a legacy of faith. This years challenges are all focused on YOU and your lifetime story. When you join us in this challenge you will be creating a mini-autobiography. We are counting down the days till January 6th because we are so stinkin' excited about the My Lifetime Story challenges!!!

Wouldn't you to know what your grandma's favorite toy was as a child, how she felt when she met your grandpa, her favorite scripture and the song that expressed her heart? Your children and grandchildren will have that treasure when you join us in this challenge!

We will start out with your family roots in January and move into your childhood in February. We will continue throughout the year with your teen and adult years as well. The last challenge of the year will be a letter to your future generations or anyone who reads your book.

Each of our stories is important. This is a book that everyone should create about themselves. It will be the most treasured album of your family. As you create this album about your lifetime story you will be leaving YOUR LEGACY OF FAITH. This is an album that can make an impact in your life as you create it, but it will also create a major impact in the lives of your family both now and in future generations. As your children read your story in this scrapbook that YOU created, they will take your stories to heart. Your stories may have more impact on them than even Bible stories, because they are personal and from someone they know and . When friends and neighbors pick up your storybook and look through it you will be witnessing without even saying a word. They will read your lifetime history and discover your of Jesus, and His forgiveness and faithfulness in your life!

The My Lifetime story challenges will begin the first Wednesday in January. A new challenge will be posted each Wednesday all throughout 2010. The last challenge will be posted the last Wednesday of December. Just because the challenge series ends at the end of 2010 doesn't mean your lifetime story album is finished. We will continue to offer periodic challenges to continue your autobiography and keep it current.

Please join us in this year long challenge! Some of these challenges may be layouts you have already completed. That is ok! We need to get these all compiled in your lifetime storybook. Everyone deserves to be the star of their own book, including and most importantly YOU! If you don't put some time aside to create your My Lifetime Story album now, you may never find the time. If something were to happen to you, would your legacy of faith be lost forever? Take action now, join us as we create our lifetime storybooks for the next generation to see the glorious work the Lord can do in the life of a woman that loves God!

Begin thinking about what size album you would like to use for your My Lifetime Story challenge. started hers in an 8x8 but now has decided that she needs more space so is moving up to a 12x12. is doing hers 12x12 also because she knew she had a lot she wanted to fit into this album. What size do you prefer? Start gathering your supplies now so you will be ready to start when we kick off the first challenge January 6th!

Next week we will post a Photo List so you can start gathering photos that you will need for this challenge.

Kelsey, I'm going to post any recipes I find on my blog so you can find them easily!
This is from Linda's Low-Carb Menus and Recipes--I slightly adjusted it to "our" liking.

TEXAS CHILI
2 pounds ground beef, lean
2 ounces onion, chopped, 1 small or 1/2 cup {although I'd add a cup}
2 cloves garlic, minced
1 tablespoon chili powder
3 teaspoons cumin
1 teaspoon paprika {I like the Hungarian--I got some Spanish last week}
2 teaspoons salt
8 ounce can no-sugar added tomato sauce {I'd just use chopped tomatoes}
2 cups water
Brown the meat, onion and garlic in a large pot; drain grease well. Add all remaining ingredients; bring to a boil. Turn down the heat to low; cover and simmer 1- 1 1/2 hours.

Makes about 6 servings - Can be frozen

Per Serving: 283 Calories; 18g Fat; 25g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

This won't be thick like traditional chili with beans and a thick tomato base. It's more like a thin chili soup. Be sure to drain the fat really well or you'll end up with a layer of grease floating on top, like I did. I had to skim as much as I could. It might be good with some other veggies added, such as chopped tomatoes, zucchini, green peppers, etc. It will go farther, but will increase the carbs.
{Zucchini sounds really good! I'd add 2 T ground flax to help thicken it a bit too}

Firehouse Jalapenos - All Recipes: "Firehouse Jalapenos

PREP TIME 20 Min COOK TIME 30 Min READY IN 50 Min
Original recipe yield 60

30 jalapeno peppers, halved and seeded
1 (8 ounce) package cream cheese, softened
30 small smoked sausages (such as Lit'l Smokies®)
1 (1 pound) package thin-sliced bacon, cut in half
60 toothpicks
1/2 cup barbeque sauce
Add to Recipe Box

Preheat an oven to 350 degrees F (175 degrees C).
Fill the jalapeno pepper halves with softened cream cheese, then place a smoked sausage into each pepper on top of the cheese. Wrap each piece with a half strip of bacon and secure with a toothpick. Place the peppers onto a baking sheet and brush with the barbeque sauce.
Bake in the preheated oven until the bacon is crispy, about 30 minutes."

PTL for the energy to get through the weekend! I think I'm waning now...*glug*

So my mommy is in the hospital. They're testing her for everything (heart, bp and sugar related) and everything is coming out "okay" -- which makes me want to scream -- "Then test for something else you dopey, dopey doctors!!" I'm so tired of doctors and their Q complexes. Give me a break. I'm sick. I come to you for help. You have the responsibility to HELP me! Good grief.

Hopefully she'll be coming round the mountain...I mean coming home tomorrow.

Celia got Fraggle Rock Season 1 for her birthday. She's been watching Fraggle Rock Season 1 for 3 days now. I'm getting tired of Fraggle Rock Season 1.

Celia's watching Nim's Island and eating cough drops *cough cough* and I'm drinking my OJ and Sprite, and Jon is off to class after being home sick all day. I've been delinquent in uploading my scrapbook layouts so I'm going to remedy that now! I'm finally conscious at the same time Celia is preoccupied, so I thought I should get busy! Mmmmm, I love Sprite and orange juice!

It just popped in my head to do a page for my movie scrapbook of Glitch (from Tin Man) with one of his quotes curled around his hair. :D

Today has been LONG! For M&P even more so, I'm sure! I spent 2 hrs doing laundry. And now Jon is off painting tonight. My sweet Bear went to a birthday party and to Granny Dolly's later--she was sooo tuckered out! So I get a bit of scrap time on my own, so I'm scrapping and watching Tin Man (again).

I'm having a CT of my sinuses on Wednesday. How gross is that? Sure would be great to be WELL for a change though! Pray they find something they can fix!

Well, I've always meant to get around to scrapping this song so I finally did tonight--by Counting Crows on the Shrek 2 Soundtrack.

Well, I'm gonna finish my cranberry pomegranate vanilla yogurt smoothie, watch some more Far and Away, and get to bed earlierish.

Fiona's moving to Branson tomorrow--oh, yeah, Kelsey, Fiona's moving to Branson tomorrow! :) You can tell Kayla it's just a trial basis until she falls in love with her!

As you can see, she fits rather well on the back of our couch. :)

Actor, comedian and exasperated dad Mac dies at 50 By FRAZIER MOORE, AP Television Writer

Bernie Mac blended style, authority and a touch of self-aware bluster to make audiences laugh as well as connect with him. For Mac, who died Saturday at age 50, it was a winning mix, delivering him from a poor childhood to stardom as a standup comedian, in films including the casino heist caper "Ocean's Eleven" and his acclaimed sitcom "The Bernie Mac Show."

Though his comedy drew on tough experiences as a black man, he had mainstream appeal — befitting inspiration he found in a wide range of humorists: Harpo Marx as well as Moms Mabley; squeaky-clean Red Skelton, but also the raw Redd Foxx.

Mac died Saturday morning of complications from pneumonia in a Chicago-area hospital, his publicist, Danica Smith, said in a statement from Los Angeles.

"The world just got a little less funny," said "Oceans" co-star George Clooney.

Don Cheadle, another member of the "Oceans" gang, concurred: "This is a very sad day for many of us who knew and loved Bernie. He brought so much joy to so many. He will be missed, but heaven just got funnier."

Mac suffered from sarcoidosis, an inflammatory lung disease that produces tiny lumps of cells in the body's organs, but had said the condition went into remission in 2005. He recently was hospitalized and treated for pneumonia, which his publicist said was not related to the disease.

Recently, Mac's brand of comedy caught him flack when he was heckled during a surprise appearance at a July fundraiser for Democratic presidential candidate and fellow Chicagoan Barack Obama.

Toward the end of a 10-minute standup routine, Mac joked about menopause, sexual infidelity and promiscuity, and used occasional crude language. Obama took the stage about 15 minutes later, implored Mac to "clean up your act next time," then let him off the hook, adding: "By the way, I'm just messing with you, man."

Even so, Obama's campaign later issued a rebuke, saying the senator "doesn't condone these statements and believes what was said was inappropriate."

But despite controversy or difficulties, in his words, Mac was always a performer.

"Wherever I am, I have to play," he said in 2002. "I have to put on a good show."

Mac worked his way to Hollywood success from an impoverished upbringing on Chicago's South Side. He began doing standup as a child, telling jokes for spare change on subways, and his film career started with a small role as a club doorman in the Damon Wayans comedy "Mo' Money" in 1992. In 1996, he appeared in the Spike Lee drama "Get on the Bus."

He was one of "The Original Kings of Comedy" in the 2000 documentary of that title that brought a new generation of black standup comedy stars to a wider audience.

"The majority of his core fan base will remember that when they paid their money to see Bernie Mac ... he gave them their money's worth," Steve Harvey, one of his co-stars in "Original Kings," told CNN on Saturday.

Mac went on to star in the hugely popular "Ocean's Eleven" franchise with Brad Pitt and George Clooney, playing a gaming-table dealer who was in on the heist. Carl Reiner, who also appeared in the "Ocean's" films, said Saturday he was "in utter shock" because he thought Mac's health was improving.

"He was just so alive," Reiner said. "I can't believe he's gone."

Mac and Ashton Kutcher topped the box office in 2005's "Guess Who," a comedy remake of the classic Spencer Tracy and Katharine Hepburn drama "Guess Who's Coming to Dinner?" Mac played the dad who's shocked that his daughter is marrying a white man.

Mac also had starring roles in "Bad Santa," "Charlie's Angels: Full Throttle" and "Transformers."

But his career and comic identity were forged in television.

In the late 1990s, he had a recurring role in "Moesha," the UPN network comedy starring pop star Brandy. The critical and popular acclaim came after he landed his own Fox television series "The Bernie Mac Show," about a child-averse couple who suddenly are saddled with three children.

Mac mined laughs from the universal frustrations of parenting, often breaking the "fourth wall" to address the camera throughout the series that aired from 2001 to 2006. "C'mon, America," implored Mac, in character as the put-upon dad. "When I say I wanna kill those kids, YOU know what I mean."

The series won a Peabody Award in 2002, and Mac was nominated for a Golden Globe and an Emmy. In real life, he was "the king of his household" — very much like his character on that series, his daughter, Je'niece Childress, told The Associated Press on Saturday.

"But television handcuffs you, man," he said in a 2001 Associated Press interview before the show had premiered. "Now everyone telling me what I CAN'T do, what I CAN say, what I SHOULD do, and asking, `Are blacks gonna be mad at you? Are whites gonna accept you?'"

He also was nominated for a Grammy award for best comedy album in 2001 along with his "The Original Kings of Comedy" co-stars Harvey, D.L. Hughley and Cedric The Entertainer.

Chicago music producer Carolyn Albritton said she was Bernie Mac's first manager, having met him in 1991 at Chicago's Cotton Club where she hosted an open-mike night. He was an immediate hit, Albritton said Saturday, and he asked her to help guide his career.

"From very early on I thought he was destined for success," Albritton said. "He never lost track of where he came from, and he'd often use real life experiences, his family, his friends, in his routine. After he made it, he stayed a very humble man. His family was the most important thing in the world to him."

In 2007, Mac told David Letterman on CBS' "Late Show" that he planned to retire soon.

"I'm going to still do my producing, my films, but I want to enjoy my life a little bit," Mac told Letterman. "I missed a lot of things, you know. I was a street performer for two years. I went into clubs in 1977."

Mac was born Bernard Jeffrey McCullough on Oct. 5, 1957, in Chicago. He grew up on the South Side, living with his mother and grandparents. His grandfather was the deacon of a Baptist church.

In his 2004 memoir, "Maybe You Never Cry Again," Mac wrote about having a poor childhood — eating bologna for dinner — and a strict, no-nonsense upbringing.

"I came from a place where there wasn't a lot of joy," Mac told the AP in 2001. "I decided to try to make other people laugh when there wasn't a lot of things to laugh about."

Mac's mother died of cancer when he was 16. In his book, Mac said she was a support for him and told him he would surprise everyone when he grew up.

"Woman believed in me," he wrote. "She believed in me long before I believed."

Mac's death Saturday coincided with the annual Bud Billiken Parade in Chicago, a major event in the predominantly black South Side that the comedian had previously attended.

"It's truly the passing of one of our favorite sons," said Paula Robinson, president of the Black Metropolis National Heritage Area. "He was extremely innovative in putting his life experiences in comedic form and doing it without vulgarity.

"He was an ambassador of Chicago's black community, and the national black community at large."

A public memorial is planned for noon Aug. 16 at The House of Hope church in Chicago, said Smith, Mac's publicist.

We had a long long LONG Thursday. Bear stayed with M&P so we could rest and go see The Dark Knight.

The Dark Knight was amazing.

I didn't see Heath Ledger in the movie. He wasn't there--just a sad clown in his place. I didn't see his face or smile--not even a hint of his voice. His performance was flawless--and that is a rarity I respect and truly admire.

Now I feel like the sad clown at the realization of the magnitude of his tragic death all over again.

Or maybe I'm just feeling incredibly melodramatic. Go figure.

I'm watching Signs this morning as I put this post together. Wouldnt' it be funny if when Mel Gibson uses the knife as a mirror and looks under the door if the alien was just sitting there tapping his gnarly fingers on his chin? Well, it amused me anyways.

I spent the day at home--scrapping every second between 3yr-old damage control and napping! I'm exhausted. Doing nothing will do that to you. Celia and I made brownies, but for brownies, they were pretty sub-par. What's up with brownie mixes lately? Am I gonna have to make them from scratch to get a good brownie? I love to cook, but c'mon, who has that kind of time (and patience!)?

I was hoping to catch some of my Faith Sisters in the chat room, but alas, I spent the latter part of the evening snuggled with one Miss Celia Duggins, watching Charlie and The Chocolate Factory--or "Wiggy Wonga" as she calls him. :) Jon's home now so he gets the Celia tuck-in (she napped till after 7pm!) and it's my turn to have "fun" --which for me means finishing this blog post and hittin' the hay! Missions dinner at church tomorrow--yay for carbohydrates--NOT!

Here are just *some* of my recent layouts--the majority of which I made today. Yes, I've been busy! (I just wish my brain were still useful for other things!)

I thank God for this most amazing day, for the leaping greenly spirits of trees, and for the blue dream of sky and for everything which is natural, which is infinite, which is yes.

I'm holding down the fort today. Everyone is at Missionary Renwal OR on vacation. I was gonna go over this afternoon but I need to stay and babysit one of my projects, which is okay by me since I feel like mush today.

We had a fairly (blessedly!) uneventful holiday weekend. I took a few pics at Maw Maw Tate's on Sunday, but no "4th" pics to speak of. Celia came home from preschool last week covered in glitter sparkles and a "America Bless God" handpainted t-shirt!

I did my Independence Day (the movie!) LO (scroll down to previous post!), but I never even had a chance to watch it! Maybe I'll be able to fit that in tonight.

I used some more pics from the "farm" to create these 3 LOs using ValGouveia Designs' {Kit Nice Day}, from Art and Scrap. Such a cute kit with really great colors!!

I think it is going to be funny (to me, anyhoo) if I let this day go by without watching Independence Day for the bazillionth time! I thought I'd be a bit ::silly:: and also get another page of my movie scrapbook done for this week's challenge at Faith Sisters. I scrapped one of my favorite movies with the Patriotic Faith Sisters Collaboration Kit. It is SO cute! Lots of stars! yay!

We saw this last night—good movie! Lots of action from the get-go. The director made you actually care about what happened to these people. I don’t care if it isn’t historically accurate, it was fun!! (I have to admit, every time I saw a wooly mammoth --or manik as they called them--I couldn't help but think Furry Oliphant! )

There was a beautiful lightning storm last night! It was so high we couldn't hear the storm at all-- just saw the amazing lightning. You have to keep your eye on the screen or you'll miss it!

A lil LO 'bout { ME }. I'm silly, I know, scrapping my Flair...but Flair was such a great idea! *LQTM!* The background paper here is from Krystal Hartley. Click on the image to check it out in my Faith Sisters Gallery. This is me. Sugar on the outside, sarcasm on the inside! That Captain Kirk flair just cracks me up to pieces!!! If you can't read it, it says, "I'm sorry, I can't hear you over the sound of how AWESOME I am." --And you have to emphasize the AWESOME and practically wink a little bit to get it right. :) ) And I have GOT to find Enchanted to buy (fo' cheap that is). I love a good movie that both Celia and I like to watch. I mean, The Backyardigans are cute and all...but I can only take so much CUTE. I have Celia. I don't need more cute. ;)

So, since I've been sick the past few days I haven't been able to think straight and create anything!

I grabbed this adorable Quick Page from Emma {at the Faith Sisters Shop} and threw in some of Ro's fabulous grunge goodies. I LOVE this picture of Celia! Jon took it at Dolly's the other night. Such a treasure *sigh*.
So someone mentioned I should try out for more CTs since I just gobble everything up! So on a whim I applied to a few CTs this morning and I already got accepted to one! I'll have more info on that later!! *cool beans!*

I'm considering surprising Missy C by letting her paint some of her wooden blocks this evening. If I have the courage to get into that kind of mess, that is!!

Friday at last! Still feeling just 80% better. Still taking massive amounts of decongestants so I can breathe. The antiobiotic is supposed to keep working for 5 more days. We'll see! Bear is doing much, much better and is back to her sweet little self!

Another Friday with the sniffles...and worse...

My precious Bear has pneumonia and strep throat. How horrid is that? Thankfully we got her in to the doctor before it turned into *bad* pneumonia and got her on some antibiotics. Poor kiddo. :(

I think she's going to stay the night at Maw Maw and Paw Paw's again tonight so I too can get some rest. Maybe by next week we'll be running around the front yard together again!!

Here are some layouts I did today. Our office had lunch together, but since I kindly didn't feel the need to spread strep to the rest of them I just stayed at my computer and scrapped! Also found some great Paris stuff from Divine Digitals for an insane bargain!! *wahoo!*
